Chocolate Coconut Bark

Simple and quick recipe with limited ingredients that can be eaten to boost energy, just be aware that this is a saturated "fat bomb." To get fancy, add in nuts (hazelnuts, almonds) toasted in the oven at 300F and then toast coconut flakes for 3-4 minutes (make sure they don't burn!). You can make this nut-free and substitute seeds or dried fruit. Disclaimer: Please read this study publication to make an informed decision about whether consuming coconut oil is right for you. Coconut oil is NOT for you if you have high cholesterol, atherosclerosis, or heart disease, or have risk-factors for any of those.



Ingredients

· 1 cup organic coconut oil

· 1 cup organic raw cacao powder

· 1-2 tbsp honey (or pure maple syrup)

· 1/2 cup macadamia nuts

· 1 tbsp cinnamon

1 tbsp raw almond butter


Directions

1. Mix ingredients and heat/melt them on the stove or in the microwave, stirring

2. Pour onto a cookie sheet covered with parchment paper, smooth out until 1/4-1/2" thick

3. Put it in the fridge or freezer for 15 minutes to harden

4. Cut into squares or break into pieces
